Recipe: Crunchy oat coconut and choc chip biscuits

A short post with a recipe for some amazing biscuits. These are not gluten or dairy free, so unfortunately it isn't for everyone, but they are totally delicious.

Ingredients

  • 200g butter
  • 1 cup oats
  • 1 1/2 cups plain flour
  • 3/4 cup white sugar
  • 3/4 cup brown muscavado sugar
  • 2 eggs
  • 3/4 cup desiccated coconut
  • 1 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup choc chips
  • pre-heat oven 190 degrees

Instructions

  1. Combine and cream the sugar and butter in a bowl.
  2. Mix in and beat the eggs and flour until smooth (ish)
  3. Add the salt and baking soda and mix
  4. Add coconut and oats, choc chips – mix
  5. Prep your baking surface with grease paper lining and either a) spoon small dollops with plenty of space in between (for making circular cookies) OR b) pour a generous layer of the mixture onto the baking tray, making one large square, ready for cutting later when it is ready.
  6. Bake for 13 mins or until golden brown.
  7. It’ll still be soft slightly, remove from oven and allow to cool ready for eating or cutting.
